Smart scales in provincial restaurant

Description:
The province of East-Flanders has its offices in the brand new Provincial Building in Ghent. It also holds Resto Leo, a restaurant where staff, visitors, tourists e.a. come and enjoy breakfast, lunch or a nice coffee break. Resto Leo is being hosted by Erov, an organisation working on regional food products (from research to promotion, from innovation to logistics).
For the last couple of months, smart scales were installed in order to weigh and scan to food leftovers. This way the scale can analyse what types of food is mostly surplus and which isn’t. Based on these results, the kitchen staff can better proportion the lunch, to avoid food waste as much as possible.
In the EWWR, we want to communicate about the results of the action, disseminating how much food loss was registered and what the restaurant does or plans to do to tackle this.
