Allium so.p. is a living lab that is creating a dinamic economic model in dealing with food waste. It is a model for redistribution of surplus food – saving the food from landfills and offering it to the vulnerable groups as a healthy and nourishing meal. Besides food waste reduction – the aim of the project is also adding to social transformation that raises dignity of specific social groups, as – human dignity is the foundation of human actions.
We’re operating in a specific space, with equipment and knowledge that enables new scenarios in the food supply chain and the development of new products from a collaborative businness model. From food, that likely would not reach the shelves – new value is created, providing opportunities for new jobs and the construction of an inclusive society.
In “Mini tovarna“, Allium’s lab, a group of employees are (besides other activities ) transforming discarded bread into delicious items such as sweet and savoury dumplings, bread puddings, granola and cookies, that are proven to be appropriate to enrich also any business event. In this matter, we’re hosting a banquet at TedX event in Cankarjev dom, Ljubljana on november 22, where apr. 1500 attendants will witness the project itself. That offers us the much needed recognition and marketing and of course the income that enables to preserve the jobs for the vulnerable individuals, that we’re imploying.

Zadruga Allium is a part of a transdisciplinary project Rustik , aiming to enable comunities, actors and policy makers to design better strategies, initiatives and pollicies, fostering sustainability transitions of rural areas.
